A router, and, the right bits, would have been easier to remove the bulk of the epoxy, and, round out the edges . Just recoat the edges .

Wait a minute. I may have spoken too soon. you shouldn't use a hand plane on plywood. I dont think I saw any solid wood anywhere on this boat. OK for now just the clamps.

Nice vid. you are a good boat builder with few tools. I would encourage you to take money you earn from YT and buy clamps and a couple of hand planes. Learning to use the planes will make forming the contours of the daggerboard and rudder much easier and clamps will make all your glue ups faster. Happy sailing.

Brilliant. What size and weight the boat?

I’ve raced small dinghies most of my life, been a champ many times and I’m here to say if you build a dinghy with high freeboard you will find it very hard to sail upwind. Simply there is air pressure on the hull blowing you sideways and your progression upwind on either port or starboard will make it a hard trip.
